Where we get our meet from

Our beef is sourced from Park Farm, Blickling, where Tony and Emily Bambridge rear their cattle using traditional farming methods under the Red Tractor Assurance Scheme.

The herd is made up of Lincoln Reds and carefully selected Lincoln Red × Simmental crosses, producing exceptional beef with the ideal balance of natural growth, rich marbling and outstanding flavour. This marbling is what makes the beef perfect for dry ageing, allowing it to mature for up to four weeks to develop deeper flavour, increased tenderness and exceptional succulence.

Naturally conceived and pasture-raised, the cattle spend the spring and summer grazing with their mothers on the meadows surrounding the River Bure. Their grazing helps preserve the unique wetland landscape that has formed part of the National Trust’s Blickling Estate for over 300 years.

The result is beautifully matured, locally reared beef with outstanding flavour, exceptional tenderness and a true sense of place.
